Easy sautéed Cauliflower Rice
Ingredients:
Fresh cauliflower
1 small onion or 1/2 of a large diced
1 small tomato diced
Chopped Cilantro ( Optional )
3 tbsp Olive Oil
Salt and Pepper or seasoning of choice
Directions:
Shred cauliflower with cheese grater
In frying pan, heat Olive Oil
Add shredded cauliflower, onion, tomato, cilantro and seasoning of choice.
Stir fry until desired consistency.

Zoodles & Meatballs
Seriously this is probably one of my favorite meals !
Ingredients:
Lean ground beef ( preferably grass fed)
Almond Meal flour about 2 tbsp
3 tbsps Olive Oil
3 to 4 Zucchini (spiraled)
1 can diced tomatoes ( no preservatives)
1 small can tomato sauce (no preservatives)
1 to 2 cloves garlic
Salt and Pepper (or seasoning of choice)
Directions:
Mix ground beef, almond flour, salt and pepper in a bowl (mix well), make meatballs.
Brown meatballs in Olive oil.
In sauce pan, mix diced tomatoes, tomato sauce, salt and peeper to taste.
Put meatballs carefully in sauce and simmer about 25 minutes, stir carefully every few minutes.
Zoodles :
Spiral zucchini ( I use a Veggetti )
Boil water in pot ( full boil )
Drop Zoodles in boiling water for 2 minutes, DONT over boil.
Take Zoodles out of pot into a bowl to stop the cooking process.
Serve and enjoy !
Chicken Pozole Whole30 style with Cauliflower
Ingredients:
3 Chicken breast
1 to 2 cups Fresh Cauliflower
Ground chile powder
Fresh Cabbage
Radishes
Cilantro
1 large Onion
Lemon
Salt and Pepper
Directions:
Boil chicken breast, 1/2 of 1 large onion rough chopped, salt and pepper to taste for 20 minutes.
Add chile powder, enough to your own taste ( mild or spicy) I use New Mexico spicy.
Add fresh cut cauliflower, boil for additional 10 to 15 minutes ( leave a little crunchy).
Add Garnish:
Chopped fresh cilantro
Onion
Radish
Lemon

Sirloin and sautéed green-beans
Ingredients:
4 to 5 small Lean Top Sirloin steaks
3 Tbsp olive or canola oil
1/2 onion (sliced)
1 tomato (sliced)
Fresh green-beans
7 slices of Bacon (UNCURED if possible)
Fresh broccoli florets
2 cloves garlic (chopped)
Salt
Pepper
Directions: For steaks
Heat oil on medium in frying pan, place steaks in pan, season with salt and pepper or seasoning of choice, sear each side till browned on ea. side, add onion and tomato, cover and simmer, add a little water to keep moist. Cook till tender.
Directions for Green-beans
Wash and cut ends of green beans, (set aside) cut bacon in1/2 inch thick, cook till just crisp ( don't over cook) remove from pan set aside. Put green beans and broccoli in pan of bacon oil, sauté for 5 minutes, add fresh chopped garlic,salt and pepper to taste, add cooked bacon, cover and simmer till tender.

Vegetable Ravioli soup
1 cup fresh spinach
6 large fresh mushrooms sliced
1 cup zucchini of your choice
1/2 cup yellow Cherry tomatoes
Chicken broth or bouillon
Chicken mozzarella Ravioli (Costco
Chop and boil all veggies till desired tenderness.
Added Ravioli the last 4 minutes
This is a good way to use all your veggies you have in your fridge!

Sweet potato Banana Puffs
About 1/2 cup cooked sweet potato
(I used left over from dinner)
1/2 banana
1 egg
A dash of cinnamon
Directions:
Mash and mix all ingredients
Heat pan with Coconut oil
Drop 1 tbsp in pan
Cook on low to medium about 3 minutes on each side.
Puffs will be slightly soft
Let stand a few minutes to firm
I used fresh sliced banana and Coconut Cream as my topping!

A little about me 🌸
I'm 48, a wife, a mom of 2 daughters and a Grammie to 2 beautiful granddaughters and 1 handsome grandson
I love to cook because I love to eat 😁
My fitness journey has been up and down, as well as my weight. I've done WW many years ago ( it helped ) although it was a phase that quickly passed.
My lowest weight was 109 a few years ago ( stress related ) not healthy.
As my weight slowly crept back up to the 130's 😳 I felt it was time to start concentrating on doing something about it, as I cooked up healthier meals, my muffin just wouldn't go away (age).
So here's the BEST part! My daughter asked if I would start something called the Whole30, which meant All clean eating, No sugar, No bread, No grains, No dairy etc... No alcohol ( I don't drink anyway ). Wow that meant really just about everthing I love. I agreed to do it.
So my Whole30 was about to begin March 24th, I told myself, I could stop at anytime right ? what did I have to lose by trying it.
Wow Big results HUGE !
Today is Day 25 and I don't know how I've ever survived without clean eating! Don't get me wrong, I will have something sweet or that piece of bread occasionally, but I will never be the same as I now look at food in a different way.
So far this is my fitness journey and I'm Loving it. Be Blessed and Whole30 on!
